Happy New Year!

2009

We made some yummy 2009 french toast this morning! That was interesting. No one wants that much powdered sugar on their french toast. Ok- maybe they do- but I don’t. After I finally got all the toast sugared, it was cold and had to be reheated. We also scraped off most of the sugar. The kids enjoyed it, however, and it was a fun memory.

Peach French Toast.

I still topped with a little maple syrup, even though it says you don’t need to. This was absolutely heavenly!

tasty tasty

I whipped up some lemon squares this morning. They weren’t for any occasion- except that I am hungry 24/7. I thought I would share.

Lemon Squares

Crust:

3 cups all-purpose flour
1 1/3 cups powdered sugar
1 1/2 cups butter, softened

Filling:

6 eggs
1 3/4 cups white sugar
6 tablespoons all-purpose flour
1 cup lemon juice
3 drops yellow food coloring

Preheat oven to 350 degrees. Grease an enameled metal pan. Combine crust ingredients and pat dough into pan. Bake 15 minutes. Mix together filling ingredients until frothy. Pour lemon mixture over hot crust. Bake 20 more minutes. Cool on a wire rack. Dust with powdered sugar. Cut into squares.

umm…is anyone with me?

Do these not look delicious? Too bad I lack the gallbladder to eat them.

Could someone cook them (Kacie?) and allow me to live vicariously through them? Anyone else will do. Kacie is just pregnant like me so we like food.

Lunch ideas?

The kids are sick of the PB & J (except Noah, of course, who could live on it). What are your favorite things to make for your kiddo’s lunches? If it’s not something incredibly easy, could you post the recipe as well?

I am also looking for your favorite bread machine recipes as I finally bought a new bread machine to replace the broken one and I am going to try to start baking all our bread.

yummy yummy yummy!!!

So I had a bunch of canned pumpkin that I needed to use that was left over from the holidays. I was sick of looking at it so I made some muffins tonight! They were fabulous!!! Here is the recipe.

Taco Bowls

I had a fun recipe to try while David was in Tulsa and the boys (although reluctant at first) really enjoyed it!

Taco Bowls:

10 6-in flour tortillas
1/2 lb. ground turkey or beef
1/2 pkg. taco seasoning
4 oz. shredded cheddar cheese
salsa
sour cream

1. Preheat oven to 350 degrees. Trim about 1/2 in. from the edge of each tortilla. Push the tortillas into non-stick muffin tins and bake for 15 minutes.

2. Meanwhile, brown meat over medium heat until meat is cooked through, about 10 minutes. Add taco seasoning and approximately 1/3 cup water. Simmer about 5 minutes.

3. Fill each tortilla with 2 tablespoons meat and top with a couple pinches of cheese. Bake 10 to 12 minutes, until cheese is melted and cups start to brown.

4. Serve with salsa and sour cream.

The finished product:

Also, I took the edges of each tortilla that I had trimmed and turned them into an easy dessert. I coated them with cooking spray and sprinkled each of them with a little cinnamon and sugar. This was certainly the boys’ favorite part:

I affectionately called them “CinnaCircles”. Yummy=)
